And it is is Tuesday, I’m feeling the chill so we are souping up today, giving red cabbage a makeover. Most of us are familiar with braised red cabbage as a side dish, Hugh Fearnley-Whittingstall has persuaded me to make soup with it instead. Give it a go, you wont be sorry!
Red cabbage’s primary characteristics — its fabulous red colour and peppery flavour — signify that you’re getting two types of reputedly cancer-preventing substances. The red pigment comes from plant-based chemicals called flavonoids, while the sharp flavour is the result of sulphur -based compounds. In addition cabbage contributes to your overall health with fibre and a range of vitamins and minerals.
